Leftovers Pizza

According to a poll from the FoodTv.com website, out of 31 204 respondents, approximately 26.5% (8 282) considered pizza to be their favourite comfort food. While my comfort foods are more Asian-oriented, I crave a slice every so often just like everyone else.

So what happens when you're craving pizza and you've only leftovers? Answer: Pickup a cooked 9" pizza crust from the megamart, shred some cheese, slice, dice, and make a leftover pizza. With a couple cans of tomato paste in the pantry, almost-scratch pizza is just about ready-made. Besides, frozen pizza is just about as palatable as eating plastic coated cardboard...

Things you'll need:
  • Quick Pizza Suace
    • 2 cans (5.5 oz) of tomato paste
    • 1 medium onion
    • 3 cloves of garlic
    • 4 tbsp of olive oil
    • pinch of salt
    • 2 tbsp herbs
  • Pizza
    • 1 9" Cooked Pizza Shell (spledido)
    • 1 cup of shredded mozerella
    • 2 spicy sausages
    • 1/4 cup of calamata olives
    • some roasted zucchini (optional)

Prep:
  1. Finely chop the onion and garlic
  2. Add them, 4 tbsp of olive oil, and a pinch of salt to flat bottomed metal pot
  3. Mix well and add to medium heat
  4. Add the contents of two small cans of tomato paste
  5. Finely chop some herbs (e.g. parsley, oregano, and/or basil) and add them to the sauce
  6. Simmer the mixture on medium low for 10 minutes
  7. Remove from the heat and set aside
  8. Thinly slice the sausages and set aside
  9. Roughly chop some calamata olives and set aside
  10. Roughly slice some roasted zucchini and set aside
  11. Shred the cheese and set aside.

Method:
  1. Pre-heat oven to 350°F
  2. Assemble the pizza by spreading a thin layer of sauce onto the pizza crust
  3. Sprinkle with 1/3 of the shredded cheese
  4. Layer on the sausage
  5. Sprinkle on the rest of the shredded cheese
  6. Top with roasted zucchini and chopped olives
  7. Bake at 350°F for 15 minutes
  8. Remove from oven and let chill for 2 minutes before slicing

Your pizza looks delish! Making your own dough is easy too! You can get whole wheat flour to make it a tad healthier and recipes for pizza dough can be found in abundance in many websites including allrecipes.com, epicurious, cooks.com, http://www.cdkitchen.com, etc...just google "whole wheat pizza dough recipes" and you'll come up with a slew of them! Just my two sense. Another variation is to use pesto sauce instead of tomator sauce base, and top with chicken, plum tomatoes, feta cheese and drizzle with honey ~~~ mmmmmm
Alas, my experience with making pizza dough is lacking. I'll have to rectify that issue. I happen to have purchased a brand new pizza stone and have been itching to try it out. Right now, it's only acting as a thermal capacitor in my aging oven...

Mmmm...Pesto pizza...My mouth is watering already!!!
